Avery-Island
is actually a huge dome of rock salt located in Iberia Parish, about three miles inland from Vermilion Bay on the Gulf of Mexico. There is a small population on the island and access to the island is via a toll road. Avery Island is surrounded on all sides by bayous, salt marsh and swampland. Avery Island is three miles long and two and a half miles wide. It covers 2,200 acres and is approximately 2.5 miles across at its widest point. It was created by the upwelling of ancient salt deposits that exist beneath the Mississippi River Delta region and is one of five salt dome islands along the Louisiana Gulf Coast. Salt has been extracted from the island for at least several hundred years by the American Indians. Today, it is the site of one of the world's largest salt mines, and a well known brand pepper sauce has also been manufactured on the island since 1868. Avery Island is also a bird sanctuary, inhabited by exotic birds and rare plants from around the world. Edward Avery McIlhenny, affectionately known as "Mr. Ned," founded the bird colony, called Bird City, in 1895.

Southern Louisiana along the Gulf of Mexico, has a moist, semi-tropical climate. Warm winds from the Gulf of Mexico keep the temperature fairly even year round. The average January temperature is 55 degrees F and July temperatures average 82 degrees. Those parts of the state that are in close proximity to the Gulf of Mexico tend to be very humid with lots of rainfall. Southern Louisiana is hot and humid for the majority of the year, with well over 180 days of sunshine annually. Some snowfall can occur in the state in winter, but very rarely. Louisiana is prone to hurricanes, with June being the start of hurricane season.
